Mexican Salmon - Baked



Mexican salmon is so flavorful and aromatic, it is so healthy, delicious and filling. The combo of baked salmon and Mexican sauce gives a juicy and heavenly taste. A perfect Mexican dinner that’s ready within 35 minutes. Try this recipe and enjoy with your family.
Prep time: 10 minutes
Cook time: 20 minutes
Total time: 30 minutes


Ingredients:
Salmon fillet – 1
For Marinating:
Red chili powder / cayenne pepper – 1 tsp
Garlic powder – ½ tsp
Pepper powder – ½ tsp
Lemon juice -1 tsp
Salt to taste
For Sauce:
Garlic – 1 pod, chopped
Onion – 1, cut lengthwise
Green Bell Pepper – ½, cut lengthwise
Jalapeno – 1, cut lengthwise
Pepper powder – ½ tsp
Lemon juice – 1 tbsp
White wine – ¼ cup
Tomato sauce -1 tbsp
Hot sauce – 1 tbsp
Cherry tomatoes – 4
Olives – 3


Method:
1. Preheat oven to 250F. Marinate salmon with Ingredients under “For Marinating”.
2. Bake salmon for about 15 to 20 minutes. Meanwhile heat butter in a pan and add garlic to it.
3. Add onions and saute till translucent, now add green bell pepper, jalapeno, pepper and lemon juice.
4. Add white wine and cook until the veggies get cooked. Add tomato and hot sauce, give a good mix.
5. Now add cherry tomatoes and olives, cook for about 5 to 8 minutes.
6. Sauce is ready now. Place the salmon in a plate and pour the sauce over salmon and serve hot.
