Crispy Breaded Fish


Today I am going to share a recipe of delicious breaded fish. Every week on Tuesday we used to have fish for dinner. But my husband bored of eating usual fish fry every week so, thought of trying this breaded fish recipe. In this breaded fish you can taste all the flavors. It is crispy outside the fish and very soft inside which satisfy your taste buds. Even who are not a great fan of fish will fall in love with this breaded fish taste.

Prep time: 30 minutes
Cook time: 25 minutes
Total time: 55 minutes

Ingredients:
Fish fillets – 2 (I used Tilapia)
Red chili powder – 2 tsp
Ginger garlic paste – ½ tsp
Pepper powder – ½ tsp
Lemon juice – 2 tsp
Low fat mayonnaise – 2 tbsp
Garlic pod – 1, finely chopped
Bread crumbs – ½ cup
Cilantro – few, finely chopped
Oregano – 1 tsp
Salt to taste
Butter – 2 tsp

Method:
1. Clean the fish fillets and marinate with red chili powder, ginger garlic paste, pepper powder, lemon juice, salt. Let it sit for 15 minutes.
2. Preheat oven to 350F. In a bowl, mix the mayonnaise and garlic. Brush this mixture on both sides of marinated fish.
3. In a plate, mix bread crumbs, finely chopped cilantro and oregano. Now roll over the fish on bread crumbs mixture.
4. Grease a tray with butter and place the fish fillets on tray.
5. Bake it for about 25 to 20 minutes and at last broil it carefully for 25 to 30 seconds.
6. Delicious breaded fish is ready. Serve hot with your choice of dips or sauce.

Protein rich Chana Cutlet / Chickpeas Patties



My favorite snack is always a cutlet, but I am bored of cooking usual potato and veggie cutlet. I was thinking to try a different cutlet recipe and also a healthier one. At that time, I saw the soaked chana with which I was planning to prepare chana masala for dinner. So I used some of the soaked chana to prepare cutlet. This chana cutlet is fully packed with proteins. This cutlet will give excellent taste when we have with mint chutney, but I didn’t have mint leaves in home. So had with tomato ketchup which also gave great taste. Chana is a very good source of protein and also rich in dietary fiber. A good thing about chana is that they are low in fat. Try this healthy snack in home and enjoy with your family.

Prep time: 8 hours 30 minutes (including soaking time)
Cook time: 20 minutes
Total time: 8 hours 50 minutes

Ingredients:
Chana / chickpeas – 1 cup
Onion – 1, finely chopped
Ginger garlic paste – 1 tsp
Turmeric powder – ¼ tsp
Red chili powder – 1 tsp
Coriander powder – 2 tsp
Garam masala – ½ tsp
Amchoor powder – ½ tsp
Salt to taste
Egg – 1, whisked
Bread crumbs- ½ cup
Cilantro – few
Olive oil – 2 tbsp

Method:
1. Soak chana overnight and pressure cook it for 6 to 7 whistles. Drain the water and grind it coarsely in a mixer without water.
2. Heat oil in a pan, saute onions till it turns translucent. Add all the spice powders and little amount of water, saute till the raw smell leaves.
3. Add the grounded chana and salt to it, give a good mix. Add the cilantro to it. Allow the mixture to cool.
4. Take small amount of mixture, make it into a cutlet or pattie shape. Dip it in a whisked egg mixture and roll over it on bread crumbs. Heat tawa and place the cutlet.
5. Cook until it turns golden brown on both sides. Serve hot.

Parotta / Indian layered flat bread


Parotta is a layered flat bread prepared using maida or all-purpose flour. It is a most popular south Indian dish. Most of the restaurants and road side motel menus can never be complete without Parotta. The crunchy outer layer and soft inner layer gives more taste with a delicious mutton or chicken curry. It is definitely not healthy or diet-friendly dish, we can consume it once in a while for taste. In some parts of South India, they prepare deep fried parottas called poricha parotta. For healthier version, you can try this with wheat flour instead of All- purpose flour but the texture and taste will not be that good compared to the traditional recipe.

Prep time: 3 hours
Cook time: 30 mins
Total time: 3 hours 30 mins
Ingredients:
All-purpose flour – 2 cups
Sugar – 2 tsp
Salt – as needed
Egg – 1
Water – as needed
Oil – as needed

Method:
1. In a large mixing bowl, combine all-purpose flour, sugar, salt, egg and prepare soft dough by adding enough amount of water.
2. Knead the dough for about 20 mins and allow the dough to rest for 2 hours.
3. Divide the dough into 7 or 8 small balls. Clean a surface in a kitchen and apply oil for rolling the dough.
4. Take one ball, flatten it and spread it using rolling pin as thin and transparent as possible.
5. Brush oil on the rolled dough and fold it like saree pleads from one end to another. Now rotate the dough into spiral roll.
6. Let the spiral roll sit for 15 minutes. Now roll the spiral dough, don’t roll it very thin.
7. Heat Dosa pan and cook the parotta till it turns golden brown on both sides. Once the parotta is cooked beat it with hand to define layers.

8. Serve hot with your choice of curry.

Pineapple Upside Down Cake


I am a big fan of cakes baked in home. I love the taste of pineapple. This pineapple upside down cake satisfies my taste buds by giving both flavor in one dish. This cake is very easy and fun to bake. In every bite you can taste the soft spongy cake with tasty pineapple chunks. Try to make this on special occasions and enjoy your family feedback.


Prep time: 20 mins
Cook time: 35 mins
Total time: 55 mins
Ingredients:
Toppings:
Butter – 2 tbsp
Brown sugar – 3 tbsp
Pineapple slices – 4
Cherries – few
For Cake:
Vanilla Cake mix – 1 box
Water – 1 cup
Vegetable oil – ½ cup
Eggs – 3

Method:
1. In a large mixing bowl, beat eggs until frothy. Add vegetable oil, cake mix and water. Give a good mix for about 10 minutes.
2. Preheat oven to 350F. Grease the pan with butter, Spread the brown sugar in the baking pan, and arrange pineapple slices according to your wish.
3. Pour the cake mix batter over the pineapple arrangement. Bake it for 35 mins or until toothpick inserted in center comes out clean.
4. Leave pan over cake 5 minutes and then remove pan.

5. Arrange the cherries and serve ….

Instant Crispy Rava Dosa


Rava dosa is one of the most popular South Indian Breakfast. I love restaurant style crispy rava dosa, but in US it is impossible to taste it in Indian Restaurant. Thought of trying in home, it came out very well same as restaurant style crispy dosa. My hubby loved itJ. The crispy texture, golden brown color and the aromatic tempering gives great taste. Try this in home and get appreciation from your family.


Prep time: 10 mins
Cook time: 15 mins
Total time: 25 mins


Ingredients:
All purpose flour – 1 cup
Sooji – ½ cup
Rice flour – 2 tbsp
Yogurt – 2 tbsp
Onion – 1, chopped
Green chili – 2, chopped
Ginger – 1 inch piece
Cilantro – few
For tempering:
Oil – 1 tsp
Mustard seeds – ½ tsp
Cumin seeds – ½ tsp
Peppercorns – ½ tsp
Red chili – 2, chopped
Cashew – 3
Curry leaves – few
Method:
1. In a bowl, take all purpose flour, sooji, rice flour, curd. Add chopped onion, green chili, ginger and cilantro with it.
2. Heat oil in a pan, temper with the ingredients listed under “For tempering”. Add this to the bowl.
3. Now add water and salt to the bowl and prepare a watery batter without lumps.
4. Heat dosa pan, Take ladle full of batter and spill it on the dosa pan. Don’t pour batter and spread like normal dosa.
5. Pour 1 tsp oil around dosa and cover with lid, so that all the sides will get cooked equally.
6. Cook until the dosa turns golden brown. Serve hot with your favorite chutney or sambar.

Tilapia with Asparagus stir fry and Sauteed onions


Easy and healthy recipe for dinner. The combination of Tilapia and Asparagus with sautéed onion gives a perfect taste and healthy filling dinner.
Prep time: 20 mins
Cook time: 15 mins
Total time: 35 mins

Ingredients:
Tilapia Fish – 1
Red chili powder – 2 tsp
Garlic powder – ½ tsp
Pepper powder – ½ tsp
Asparagus – 1 bunch
Cumin seeds- ½ tsp
Ginger – 1 inch piece, finely chopped
Garlic – 2 pods, finely chopped
Jalapenos – 2
Cherry tomatoes – 5
Onion – 1, chopped
Salt to taste
Oil – 3 tbsp
Cilantro for Garnish
Lemon piece – 1

Method:
1. Clean the fish well, marinate with red chili powder, Garlic powder, Pepper powder and salt, keep aside for 10 mins.
2. Steam the Asparagus until it’s well-cooked. Heat 1 tbsp oil in pan, Add cumin seeds, ginger and garlic. Saute until raw smell leaves.
3. Add Jalapenos and cherry tomatoes and cook for 3 to 5 mins. Now add Asparagus and salt, give a good mix and cook for 2 mins.
4. Heat 1 tbsp oil in pan, Place the marinated fish and cook for 8 to 10 mins. Flip over other side and cook for about 7 to 8 mins.
5. Now remove the fish from the pan and add the onions and saute for5 to 6 mins. The onions will blend with marinated spices and give a good taste.
6. Serve everything in a plate, Garnish with cilantro and Lemon piece.

Garlic Bread Toast Sticks


Looking for easy and tasty snack, try this Garlic bread toast sticks. It is a good evening snack which goes well with any hot drink of your preference. The taste of garlic and cheese with the crunchy bread gives nice taste.

Prep time: 5 mins
Cook time: 3 mins
Total time: 8 mins

Ingredients:
White Bread – 3
Butter – 2 tbsp
Garlic – 2 pods, finely chopped
Cilantro – few, finely chopped
Parmesan grated cheese – 2 tbsp

Method:
1. Cut the bread vertically in the shape of sticks.
2. In a bowl mix butter, garlic and cilantro into a fine paste
3. Grease tray with butter, arrange the bread sticks and broil it for 1 minute.
4. Remove the tray, turn tall the bread sticks to other side and again broil for 1 minute.
5. Now, apply the butter mix on the bread and sprinkle cheese on the top. Broil the bread again for 1 minute.

6. Tasty Snack is ready within 8 minutes.
