Mutton
rogan josh is a delicious Kashmiri dish. It is different from other mutton gravy
recipes in the way of preparation and in taste too. In this dish, there is no
need to add onion, tomato, ginger or garlic. The preparation is very easy since
there is no need for choppingJ. Main
flavor of this dish comes from the spices like Fennel seeds, dry ginger powder
and asafoetida. Curd gives a slight tangy flavor and texture to the gravy.

Ingredients:
Mutton – 250 grams
Ghee or Butter – 3 tbsp
Bay leaf – 1
Cinnamon – 1 inch piece
Cloves – 2
Yogurt – ½ cup
Kashmiri red chili powder – 3 tsp
Dry ginger powder – ¾ tsp
Green cardamom powder – ½ tsp
Black cardamom powder – ½ tsp
Pepper powder – 1 tsp
Fennel seed powder – 2 tsp
Garam masala – ½ tsp
Lemon juice – 3 tbsp
Salt to taste
Water – as needed
Cilantro for garnishing.
Method:
1. Clean
the mutton pieces well and marinate it with lemon juice and salt for about 20
mins
2. Now
for making masala paste, combine yogurt, Kashmiri red chili powder, dry ginger
powder, black and green cardamom powder, pepper powder, Fennel seed powder,
Garam masala in to a fine paste.
3. In a
pressure cooker, Heat ghee and temper with bay leaf, Cinnamon and cloves. Saute
until it gives nice aroma.
4. Now
add the mutton pieces and fry for about 10 to 12 mins.
5. Add
the yogurt – masala paste to the mutton and give a good mix. Now add salt and
enough amount of water.
6. Close
the lid and pressure cook it for about 8 to 9 whistles. Now delicious Mutton
rogan josh is ready.

Garnish with cilantro. It goes well with rice or roti.
