Onion bhajji

Onion is always available at home with little spices and besan, this recipe is easily prepared at snacks time with tea. The perfect Onion bajjis are crispy from outside and soft from inside. We can add baking soda in onion bajji batter, it makes the bhajji soft and fluffy.


Ingredients:
Onions – 2
Gram flour/ Besan flour – 1 cup
Rice flour – ¼ cup
Ginger garlic paste – 2 tsp
Chili powder – 3 tsp
Asafoetida – a pinch
Baking soda – a pinch
Salt to taste
Water as needed
Oil – for deep frying


Method:
1. In a mixing bowl, combine all the ingredients except onion and oil.
2. Slice Onions into thick slices.
2. Add water little by little and form a thick batter.
3. Heat oil in a kadai for deep frying.
4. Now dip the onion in a batter and drop pepper in oil and fry till golden.
5. Drain it in paper towel. Serve hot.


Mirchi bajji / Milaga bajji

Hi, I am back after long break with tasty, crispy and spicy Mirchi bajji. What else can be better than a milaga bajji and a cup of tea on a rainy day? Milaga bajji or mirchi bajji is an Indian popular evening snacks and it is a popular street food in Karnataka. It’s also one of those quick snacks that can be done when you have unexpected guests knocking at your door. We can prepare bajjis using many vegetables like raw banana, onion, potato etc. The most commonly used chillies for mirchi bajji is banana peppers or bhavnagari chillies.
Nutrition facts:
There are 142 calories in a 38.2 grams serving of mirchi bajji. It contains about 6.4 g of fat, 16.7 g of carbs and 4.6 g of protein.

Banana Peppers – 4

Spicy Egg Fry

Spicy egg fry is a delicious spicy Indian recipe served as side dish.  This is a quick recipe which you can make easily on your busy schedule. 
Prep time: 25 mins
Cook time: 7 mins
Total time: 32 mins


Ingredients:
Boiled Egg – 2
Red chili powder – 1 tsp
Garlic powder – ½ tsp
Pepper powder – ½ tsp
Salt to taste


Method:
1. Mix all the spice powders and form a paste.
2. Slit the boiled in to half and spread the spice paste over the eggs.
3. Heat oil in a non-stick skillet and fry the eggs on both sides till the raw smell of the spice paste disappears.

Dry Fish Curry / Karuvadu Kuzhambu

Do you want to cook something special for your family? Think about a spicy karuvadu kuzhambu and curd rice, yummy right.. I bet there is no alternative to beat this combo. My husband loves karuvadu kuzhambu and I learnt this recipe from my mom. I made this kuzhambu without adding tamarind to try a different taste and it came out well. Those who are not a big fan of tamarind can try this recipe in your home.


Prep time: 15 mins
Cook time: 25 mins
Total time: 40 mins


Ingredients:
Dried fish / Karuvadu – 30 pieces (I used Nethili)
Coconut oil – 2 tbsp
Mustard seeds – 1 tsp
Urad dal – 1 tsp
Fenugreek seeds – ½ tsp
Curry leaves – 1 spring
Garlic – 2 pods, chopped
Shallots – 20 – 25, Chopped
Green chili – 3, slit
Tomatoes -3, chopped
Raw Mango – 1/2
Turmeric powder – ½ tsp
Chili powder – 2 tsp
Coriander Powder – 3 tsp
Salt to taste
Water as needed


Method:
1. Clean the dry fish and soak in hot water for 10 mins. Drain and set aside.
2. Heat oil in an earthen ware pot, Add mustard seeds, urad dal, fenugreek seeds, curry leaves and saute for a min.
3. Add in garlic cloves, Onions and green chilies. Saute till they turn translucent.
4. Add in tomatoes and cook until they turn mushy. Now add raw mango and saute for 2 mins.
5. Add in all the spice powders and saute until the raw smell disappears.
6. Add in water and bring it to boil. Add in dried fish and simmer for 10 mins.

7. Taste to see if you need salt and adjust it. Serve hot

Egg bhurji

Egg bhurji is a very easy and quick recipe. This is just an another version of scrambled egg with some added spices. Egg bhurji is popular in north and western India. This dish is versatile and you can make lot of variations according to your taste.

Ingredients:
Eggs – 3, whisked
Onion – 1, chopped
Tomato – 1, chopped
Green chili – 3, chopped
Ginger – 1 inch, chopped
Turmeric powder – ¼ tsp
Red chili powder – 1 tsp
Coriander powder – 1 tsp
Cumin powder – 1 tsp
Pepper powder – ½ tsp
Garam masala – ½ tsp
Salt to taste
Curry leaves – 1 spring
Cilantro – few
Oil – 1 tbsp


Method:
1. Heat oil in a non-stick skillet, Add onions and saute till it turns translucent. Add curry leaves, Ginger and green chili, saute for few seconds.
2. Add all the spices and fry till the raw smell disappears. Add tomatoes, salt and saute for two minutes.

3.  Lastly add the beaten eggs and keep whisking them until cooked. Garnish with cilantro.
