Chakka
varatti is a traditional recipe in kerala. It is a popular jackfruit dish in
kerala which is prepared using ripe jackfruit bulbs. It is also rich in nutrients
and proteins. Jack fruit contains minerals, vitamins, dietary fiber and energy.
It contains no saturated fats or cholesterol.

Ingredients:
Jackfruit bulbs – 10
Jaggery – 2 cups
Water – 1 cup
Ghee – 1 tbsp
Method:
1. Heat
water in a pan, add jaggery to it. Heat it up till the jaggery dissolves in
water. Strain to remove impurities and keep aside.
2. Remove
the seeds from jackfruit and chop them. Grind it to a smooth paste without
adding water.
3. In a
heavy bottomed pan, add strained jaggery syrup and allow it to boil till it
reaches a string consistency.
4. Add
jackfruit puree to the syrup and stir continuously for about 15 mins. It starts
to thicken, now add ghee and mix well.
5. Keep
stirring for about 10 mins. At one stage, the mixture leaves the sides of the
pan. Switch off and serve.
I have never made jackfruit jam before, but this looks so deliocus! Would love to try this! :)
