Baked Vegetable patties

Vegetable patty is a nutritious dish. You can sandwich them between burgers to have a nutritious meal or dip them into a sauce and take as a snack. This is very quick and easy to prepare. You can use any combination of vegetables according to your taste.
Nutritional facts:
1 vegetable patty contains about 127 calories. I used carrot, cabbage and potato in this patty, so we can see the nutritional facts of those vegetables too. Carrots are exceptionally a good source of carotene and vitamin A. Fresh cabbage is an excellent source of antioxidant and vitamin C. 100 g of cabbage leaves provides just 25 calories. Potatoes are one of the richest source of starch, vitamins, minerals and dietary fibers.

Serving: 11 – 13 patties


Ingredients:
Boiled Potato – 5
Oil – 1 tbsp
Onion – 1, chopped
Paprika/red chili powder – 1 tsp
Pepper powder – 1/2 tsp
Carrots – 2, finely chopped
Cabbage – 1 cup, finely chopped
Salt to taste
Cilantro to garnish
Bread crumbs – 1 cup


Method:
1. Heat oil in a skillet, saute onions till it turns translucent. Add chopped carrots and cabbage, saute till it turns tender and cooked.
2. Add the spices, salt and mashed potato, Give a good mix. At last add cilantro with it. Put off flame and let it cool down.
3. Take small amount of the mix and roll in your palms to make even patties. Roll the patties in bread crumbs and place on a greased tray for baking.
4. Preheat the oven to 425 F. Bake the patties for about 15 minutes, flip over other side and bake again for 15 minutes.
5. Delicious and healthy vegetable patties are ready.
