Potato cheese balls


Crave to have some cheesy snack, try this potato cheese balls. Easy snack to prepare, filling, delicious and your little champs will surely love it. The combo of potato and cheese gives nice flavor and the shape and texture of the balls will make your kids drool over this. It is a versatile snack, we can make it spicy by adding our own spices or make it plain without adding spices. Both will give different type of taste.
Prep time: 15 mins
Cook time: 20 – 25 mins
Total time: 40 mins


Ingredients:
Boiled and mashed potatoes – 3
Low fat Mozzarella cheese – 1 string
Egg white – ½ cup
Bread crumbs – ½ cup
Salt to taste
Pepper to taste
Cilantro – few


Method:
1. Preheat oven to 300F.
2. Cut the cheese strings into small pieces.
3. In a wide bowl, combine potatoes, salt and pepper and cilantro. Mix well.
4. Now take some potato mixture, press with palm to form a flat shape. Place a cheese piece on the potato mixture and roll into a shape of ball.
5. Dip this potato cheese ball in an egg white and roll over bread crumbs.
6. Follow the same procedure and prepare small cheese stuffed potato balls.
7. Grease a tray with oil and place these balls on a baking tray.
8. Bake it for 20 to 25 mins. You can also deep fry it in oil.

9. Serve hot with sauce of your choice.

Egg Pepper Gravy

Prep time: 10 mins

Total time: 40 mins


Ingredients:
Boiled eggs – 2
Oil – 2 tbsp
Cinnamon – 1 inch piece
Cardamom – 2
Cloves – 2
Onion – 1, chopped
Ginger garlic paste – 1 tbsp
Tomato – 1, chopped
Red chili powder – 1 tsp
Coriander powder – 1 tsp
Cumin powder – ½ tsp
Turmeric powder – ¼ tsp
Pepper powder – 2 tsp
Salt to taste
Water as needed
Cilantro – for garnishing


Method:
1. Heat oil in a pan, temper with cinnamon, cloves and cardamom.
2. Add Onion and saute till translucent, add ginger garlic paste and saute till the raw smells disappears.
3. Add tomato and saute till it turns mushy. Add all the spices, salt and saute till it raw smell leaves.
4. Add enough water and allow it to boil. Now cut the boiled eggs into half and add it to the gravy.
5. Mix well till the gravy get coated with egg pieces. Switch off and serve hot.

Mexican Salmon - Baked



Mexican salmon is so flavorful and aromatic, it is so healthy, delicious and filling. The combo of baked salmon and Mexican sauce gives a juicy and heavenly taste. A perfect Mexican dinner that’s ready within 35 minutes. Try this recipe and enjoy with your family.

Ingredients:
Salmon fillet – 1
For Marinating:
Red chili powder / cayenne pepper – 1 tsp
Garlic powder – ½ tsp
Pepper powder – ½ tsp
Lemon juice -1 tsp
Salt to taste
For Sauce:
Garlic – 1 pod, chopped
Onion – 1, cut lengthwise
Green Bell Pepper – ½, cut lengthwise
Jalapeno – 1, cut lengthwise
Pepper powder – ½ tsp
Lemon juice – 1 tbsp
White wine – ¼ cup
Tomato sauce -1 tbsp
Hot sauce – 1 tbsp
Cherry tomatoes – 4
Olives – 3


Method:
1. Preheat oven to 250F. Marinate salmon with Ingredients under “For Marinating”.
2. Bake salmon for about 15 to 20 minutes. Meanwhile heat butter in a pan and add garlic to it.
3. Add onions and saute till translucent, now add green bell pepper, jalapeno, pepper and lemon juice.
4. Add white wine and cook until the veggies get cooked. Add tomato and hot sauce, give a good mix.
5. Now add cherry tomatoes and olives, cook for about 5 to 8 minutes.
6. Sauce is ready now. Place the salmon in a plate and pour the sauce over salmon and serve hot.
