Ingredients:
Eggs – 3, whisked
Onion – 1, chopped
Tomato – 1, chopped
Green chili – 3, chopped
Ginger – 1 inch, chopped
Turmeric powder – ¼ tsp
Red chili powder – 1 tsp
Coriander powder – 1 tsp
Cumin powder – 1 tsp
Pepper powder – ½ tsp
Garam masala – ½ tsp
Salt to taste
Curry leaves – 1 spring
Cilantro – few
Oil – 1 tbsp
Method:
1. Heat
oil in a non-stick skillet, Add onions and saute till it turns translucent. Add
curry leaves, Ginger and green chili, saute for few seconds.
2. Add
all the spices and fry till the raw smell disappears. Add tomatoes, salt and
saute for two minutes.
3. Lastly add the beaten eggs and keep whisking
them until cooked. Garnish with cilantro.
