Beetroot halwa

Beetroot halwa is a healthy sweet recipe. Most of women are anemic and at the time of pregnancy the hemoglobin level goes down. Beetroot contains lot of iron which helps in the formation of hemoglobin.
Prep time: 10 mins
Cook time: 35 mins
Total time: 45 mins
Serving: 4 Members


Ingredients:
Grated beetroot - 1 cup
Sugar - 1/2 cup
Milk - 1/2 cup
Ghee - 3 tbsps.
Cardamom powder - a pinch
Almonds and cashews roasted in ghee
Method:
1. In a heavy bottomed pan add 1 tbsp. of ghee and roast the grated beetroot for few minutes. Add 1/2 cup milk and allow it to cook.
2. Add 1/2 cup of sugar to the cooked beetroot, stir until it becomes thick and reach the halwa consistency whereas side by side add the remaining 2 tbsps. ghee.
3. Add cardamom powder and garnish with roasted nuts.
Note:
You can also boil the beetroot to reduce cooking time

Orange Kheer

Orange kheer is a Bengali sweet dish. It is also known as Kamala kheer. It is a dessert with a sweet and sour taste. Try it once and I am sure you will end up eating the whole bowl yourself!!
Prep time: 5 mins
Cook time: 25 mins
Total time: 30 mins
Serving: 3 Members


Ingredients:
Milk - 1/2 liter
Oranges - 1-2
Sugar - 3-4 tbsp or to taste
Cardamom powder - a pinch
Almonds
Cashews
Ghee - 1 tbsp
Method:
1. Peel the oranges, separate the outer membrane and chop into bite size pieces.
2. In a pan, heat ghee. Add the chopped almonds and cashews, fry till it turns reddish brown and keep aside.
3. In a thick bottom nonstick pan , add milk and bring it to boil. Reduce the heat and keep on heating till the milk reduces to half in quantity.
4. Add sugar and stir, till it dissolves completely in the milk. Now add the roasted nuts and cardamom powder.
5. Turn off the heat and let it cool completely. Add the orange chunks and refrigerate for 2-3 hours. Serve chilled.
