Tandoori chicken / tandoori Murgh is a popular Indian dish. It tastes very good and it is easy to prepare. Today i used chicken leg quarters to prepare tandoori chicken. In tandoori chicken, Chicken is marinated in yogurt based spicy mixture and cooked in tandoor. Instead of tandoor i cooked in oven which does not make any difference in taste.
Prep time: 4 hours
Cook time: 30 minutes
Total time: 4 hours and 30 minutes
Ingredients:
Chicken - 6 leg quarters
Kashmiri red chili powder - 2 tsp
Paprika - 2 tsp
Ginger garlic paste - 2 tsp
Black pepper powder - 2 tsp
coriander powder - 2 tsp
Cumin powder - 2 tsp
Cardamom powder - a pinch
Cinnamon powder - a pinch
Clove powder - a pinch
Lemon juice - 2 tbsp
White wine - 2 tbsp
Thick Yogurt - 4 tbsp
Oil / Ghee - 2 tbsp
Salt to taste
For sizzling tadka:
Butter - 2 tbsp
Onion - 1/2, chopped
Green chili - 2, slit
Curry leaves - few
Step by step Pictures:
Take kashmiri red chili powder in a bowl
Add Paprika,this gives good color to the chicken. No need of artificial colors
Add black pepper powder
Add coriander powder
Add cumin powder
Add cardamom powder, cinnamon powder
Add clove powder
Add lemon juice
Add white wine to it. If you are not using white wine, you can add more lemon juice.
Add thick yogurt to it
Add ginger garlic paste
Add Ghee
Add enough amount of salt
Mix well, till all spices blend well together
Marinate chicken pieces and refrigerate it for 4 hours.
Cook in tawa or griddle for 12 minutes and then bake for 30 minutes. Prepare the tadka and pour over chicken.
Method:
1. In a bowl, take all the spice powders,yogurt, white wine, lemon juice, oil and salt. Give a good mix.
2. Clean the chicken pieces well and make a slit on the pieces. Now marinate the chicken and refrigerate it for 4 hours.
3. Now cook the chicken in a griddle or tawa for 10 to 12 minutes.
4. Preheat the oven to 350F
5. Arrange the half cooked chicken in a tray and cover with aluminium foil.
6. Bake it for 20 minutes.
For tadka:
7. Heat butter in pan, Add onions, green chili and curry leaves. Saute for 3 to 5 minutes.
8. Now pour the tadka over the chicken in a tray.
9. Broil the chicken for 30 to 40 seconds.
10. Now sizzling tandoori chicken is ready.
