Vegetarian Mexican Beans and Quinoa Rice

Nowadays quinoa rice is quite famous because of its health benefits.  Quinoa, is often described as a "super food". It is packed with protein, fiber and various vitamins and minerals. It is also a good source of iron, copper, Thiamin and vitamin B6. Let's cook into the recipe.

Cook time: 30 mins
Total time: 40 mins

Ingredients:
For Beans curry:
Olive oil - 2 tsp
Garlic - 2 pods, finely chopped
Onion - 1
Green bell pepper - 1/2
Yellow bell pepper - 1/2
Paprika - 1 tsp
Cumin powder - 1/2 tsp
Coriander powder - 1/2 tsp
Oregano - 1 tsp
Red chili powder - 1/2 tsp
Brown sugar - 1/2 tsp
Salt to taste
Tomato - 1
Red kidney beans - 1/2 cup
Cilantro - few
Cheddar cheese - 2 tbsp
For Rice:
Quinoa - 1 cup
Water - 2 cups
For topping:
Sour cream or Greek yogurt

Method:
1. Soak the red kidney beans more than 8 hours and cook in a pressure cooker for about 6 to 7 whistles and keep aside.
2. In a vessel add 2 cups of water and 1 cup of quinoa, allow it to boil.
3. Once it boils, lower the flame and cover with lid. Cook it for 15 minutes or until the water is absorbed.
4. Heat oil in a pan, add garlic, onion and bell peppers. Saute until it turns soft.
5. Add all the spices, brown sugar and cooked beans, saute well.
6. Now add tomatoes, salt and water, allow it to boil. At last add cilantro and cheddar cheese.
7. Serve quinoa rice with beans curry and top it with sour cream or Greek yogurt.
