Happy New Year to all:-) Everyone like to start new year with a sweet, so i prepared Red Velvet Cake. It came out very well. Yesterday we had a get together with our friends. We enjoyed and started our new year with potluck, games and cake cutting. It tasted excellent with whipped cream frosting. Sorry:-( i am not able to click great photos. I hope you all will try and enjoy with your family.

Cook time: 30 mins
Total time: 1 hour
Ingredients:
Butter - 1 cup
Sugar - 1 1/2 cup
Vanilla extract - 1 tsp
Eggs - 2
Cocoa powder - 2 tbsp
Baking soda - 1/2 tsp
Baking powder - 1/2 tsp
Distilled vinegar - 1 tsp
Salt - a pinch
All purpose flour - 2 1/4 cup
Butter milk - 1 cup
Red color- 1 tsp
Crushed nuts ( I used almonds and cashews)
For frosting :
Whipped cream - 3 cups
Icing sugar - 3/4 cup
Gelatin - 1/4 tsp
Step By Step Pics:
Take butter in a bowl
Add sugar to the bowl
Add Vanilla extract to it
Beat it well with a electric beater
Creamy texture after beating
Add eggs to it

Add Cocoa powder, Baking powder, Baking soda,Salt and vinegar

Add first batch of flour
Add buttermilk

Take two greased tray like this
transfer half of cake batter to each tray and bake it for 25 to 30 minutes
Baked cake
Take whipped cream
Add icing sugar, gelatin to it
Beat it till fluffy and creamy
Frosting is ready
Remove the cake crust
Apply frosting over the cake
Spread it, Place another cake over it and spread cream all over it and decorate it and sprinkle nuts
Cake is ready now
Method:
1. Preheat oven to 350F
2. Take butter in a bowl. Add sugar and vanilla extract to it. Beat it till creamy with a electric beater.
3. Add eggs and again beat it well. Add cocoa powder, Baking soda, baking powder, salt and distilled vinegar. Beat it well.
4. Add first batch of flour and butter milk. Beat it well. then add the next batch of flour and again beat it.
5. now add red color to it and beat it. Grease two baking trays with butter and pour half of the cake batter in each.
6. Bake it for 25 to 30 minutes.
7. In a bowl, take whipped cream, icing sugar and gelatin. Beat till it becomes fluffy and creamy.
8. Now remove the upper puffy crust from one of the cake and apply whipped cream frosting. Spread it evenly.
9. Now place the another cake over it and spread the cream all over it evenly.
10. You can use the removed cake crust for decoration. I used it like a smiley. Sprinkle crushed nuts over the cake.
